Breakfast Burritos with Chorizo

Ingredients
2 medium tomatillos (about 4 ounces), husked and rinsed
1 jalapeno pepper (remove seeds for less heat)
1 small red onion, quartered
2 cups roughly chopped fresh cilantro (leaves and tender stems)
Juice of 1 lime
Kosher salt and freshly ground pepper
4 ounces dried chorizo, thinly sliced
3 1/2 cups frozen shredded or diced hash brown potatoes (about 1 pound)
4 large eggs, lightly beaten
1 16-ounce can low-sodium refried beans
4 10-inch flour tortillas, warmed
1 cup shredded mozzarella cheese (about 4 ounces)

Directions
Preheat the broiler. Put the tomatillos, jalapeno and red onion on a baking sheet and broil, turning once, until tender and charred in spots, about 10 minutes. Transfer the vegetables to a blender and add the cilantro, lime juice, 1/4 cup water, 3/4 teaspoon salt and a few grinds of pepper; puree until smooth.

A Special Kind of Wonder

Many years ago, I worked with my friends Betsy and Pam. Back then, we belonged to a group of about fifty-five people in a small division of a big record label. We viewed ourselves as a dysfunctional family that chose to do life together. Our niche division was the underdog of a conglomerate, we stuck together and marked many of life’s significant milestones, creating connections that are nothing short of magic. I worked there for almost a decade, and life was good for nearly the entire time (a merger in my last year was rough.) My department was our own tribe within the big family unit, fifteen of us have remained close friends for more than twenty-five years (the entire group stays in touch through reunions and social media!)

Our celebrations were always epic! Aside from the traditional holidays--we did birthdays, weddings, baby showers, album chart-topping parties. Our unit president Tony treated us to pizza when the Yankees made it to the World Series. Theme parties, record listenin…

A Merciful Response To Imperfection...

Part of society’s newsfeed isn’t about important news anymore, it’s about getting up to speed on high profile humiliations or “takedowns” on the comments sections of social media. It’s our new norm! The feed that updates quickly and furiously about other people’s lives on social media is where people go to battle and/or be entertained. We defend our views by fighting with people we’ll most likely never meet. At times, we defend people who we feel are being mistreated. A recent story about a young model being kissed by a basketball player who was in a relationship at the time drew death threats toward the young woman. People felt so strongly about taking down this young woman who they believed was wrong for kissing this guy, who had a higher profile celebrity girlfriend at the time. How is that ok?

Bullseye of Inner Circles...

I recently read an article by Jenny TeGrotenhuis, LMHCabout friendships and inner circles. The topic of friendships and inner circles has been tough for me for the past few years. Some friendships shifted once my kids started middle and high school, and a few ended. It was painfully uncomfortable, and I took it personally that certain friends didn't want to be as close as we had once been. I’ve written about this a lot and worked to try to understand it more, but an honest conversation with a few friends really helped put it in perspective to realize that attrition is normal and not to take it so personally. Through this process, I realized that the idea of having a large group of friends in my inner circle, as I did in my younger years, is a bit immature and not needed.

Tortellini in Brodo

Ingredients
2 tablespoons extra-virgin olive oil
2 leeks (white and light green parts only), halved lengthwise, thinly sliced and rinsed
2 carrots, halved lengthwise and thinly sliced
2 small celery stalks, thinly sliced
4 cloves garlic, smashed
4 cups low-sodium chicken broth
1 small piece parmesan rind
2 wide strips lemon zest (removed with a vegetable peeler)
1 12-ounce bone-in smoked pork chop, diced (bone reserved)
1 9-ounce package refrigerated cheese or meat tortellini
1 small head escarole, chopped
Freshly ground pepper

Directions
Heat the olive oil in a large pot over medium heat. Add the leeks, carrots, celery and garlic and cook, stirring occasionally, until the leeks wilt, about 5 minutes. Add 2 cups water, the chicken broth, parmesan rind, lemon zest and pork bone. Bring to a simmer and cook until the vegetables are almost tender, about 15 minutes.
