A Tough Road Ahead…

Times are undeniably hard in our country! Many people have been pushed to take action and speak up for what we believe is, intolerance. People’s beliefs and opinions are being spoken louder than ever before. I didn’t have to protest not having voting rights or any others rights for that matter, because women who advocated before me, handed people from my era many privileges in silver platters. Now, we find ourselves at a crossroads, and many women I know are torn between speaking up for their beliefs, or shutting down so they don’t displease their loved ones.

I explain to my friends that it’s a personal choice on how they choose to express their beliefs. It’s extremely important they feel safe doing so, but to keep in mind to use their authentic voice, not one from those shaming or pressuring them to feel, or think a certain way. Here’s what I always emphasize that’s not on the table as a choice -- unkindness and intolerance for the beliefs and feelings of fellow beings of this planet.…

Butterscotch Sauce:
2 tablespoons unsalted butter
1/2 cup light brown sugar
1/2 cup heavy cream
1 teaspoon vanilla extract

Batter:
Nonstick cooking spray
1 box yellow cake mix
Mascarpone-Ricotta Filling:
3 1/2 cups ricotta cheese
1/2 cup mascarpone
3 large eggs
3/4 cup sugar
1/8 teaspoon kosher salt

Butterscotch-Mascarpone Frosting:
1 1/4 cups mascarpone (10 ounces)
One 3.9-ounce package butterscotch pudding mix

1/4 cup good olive oil
3 tablespoons minced garlic (9 cloves)
1/3 cup dry white wine
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on (6 to 8 ounces each)

Cookies:
2 1/2 cups all-purpose flour

Glaze:
1 1/2 cups powdered sugar

In a medium bowl combine the flour, baking powder, and salt. Set aside.

The Illusion of the Truth

I recently watched an interview with a woman who repeated a lie that a public figure said during an interview. I was blown away by the woman’s disregard for the facts that were being presented that proved the public figure and her statement to be a lie. Common sense alone would prove her statement to be false, but the woman stuck to the lie and wouldn’t back down. There’s no doubt that this type of disregard for the truth is an epidemic.

Since the presidential election, there’s been a rise in fake news that spread through social media, TV, and radio. I’ve actually witnessed someone tell a lie and then deny that they’ve said it hours later. This illusion of the truth is disheartening, it’s become a situation when a lie becomes someone’s distorted truth because it suits their personal beliefs and/or it benefits them – it’s a selfish way to reject change and to shut out those who are not like them. It’s our generational crisis that threatens our way of coping with life when it gets tough…

New Year Rituals

I saw so many wonderful posts on social media for rituals to end the year by making lists of what you wanted to leave behind in 2016 and burning the list, and then burning sage to clear the energy in the air. There were other posts about rituals to start off the New Year with new affirmations. I was truly inspired by a few of the posts, so I created my own. I made a list of things, people, habits, cycles, situations, and memories I wanted to leave behind in 2016 and burned the list, and then burned sage. I said a few prayers while looking up at the stars and just sat in complete stillness. After the burning of the lists, I felt a sense of relief but felt like I needed more so I sat in meditation for about 20 minutes. I felt such a sense of peace and calm that literally lasted a few days.

This was such a wonderful experience that I’m going to do my list-burning, prayer, and meditation ritual every three months. My list was six pages long at the end of the year and I forgot so many thing…

Scallop and Shrimp Cocktail

Ingredients
Kosher salt
1/2 pound jumbo sea scallops (6 to 8)
1/3 cup finely chopped red onion
1/4 cup clam-tomato juice (such as Clamato)
1/4 cup ketchup
1/4 cup fresh lime juice
3 tablespoons chopped fresh cilantro
1 teaspoon seeded and finely chopped serrano chile pepper 1 teaspoon hot sauce
Freshly ground pepper
1/2 pound cooked small shrimp, peeled and deveined
Saltines or tortilla chips, for serving

Directions
Bring a pot of salted water to a boil. Add the scallops, reduce the heat and poach gently for about 2 minutes. Drain well and chill at least 30 minutes, or up to overnight.

Stir together the onion, clam-tomato juice, ketchup, lime juice, cilantro, serrano chile and hot sauce in a large bowl. Season with salt and pepper.

Quarter the scallops. Add the scallops and shrimp to the sauce and stir gently to combine. Divide among 4 glasses or bowls. Serve with saltines or chi…

Baked Tilapia With Coconut-Cilantro Sauce

Ingredients
Canola oil spray
Four 6-ounce pieces tilapia fillet
1/4 teaspoon kosher salt, plus more for seasoning
1/2 cup light reduced-fat coconut milk
1/2 cup cilantro leaves, plus more for garnish
1 teaspoon peeled chopped fresh ginger
1/2 teaspoon garam masala
2 garlic cloves
1/2 jalapeno pepper, seeded and chopped
3 cups cooked brown rice, for serving

Directions
Preheat the oven to 425 degrees F. Spray a 9-by-13-inch baking pan with canola oil spray. Sprinkle the fish with the salt and place it in the pan.

Combine the coconut milk, cilantro, ginger, garam masala, garlic and jalapeno in a blender and pulse until fairly smooth. Pour the mixture over the fish. Bake until the fish is just opaque in the center, about 15 minutes. Garnish with more cilantro and serve with the rice.
