Skip the traditional casserole and make stuffed cannelloni instead. Stuffed with creamy ricotta and nutrient-rich spinach, this dish is perfect for dinner.

Ingredients
8 oz cannelloni pasta, cooked al dente
4 oz ricotta cheese
2 oz Monterey Jack cheese, grated
2 oz spinach
1 medium red onion, finely sliced
2 cloves garlic, finely chopped
2 oz flour
2 tbsp olive oil
2 tbsp lemon juice
16 oz fresh milk
salt and pepper, to taste

Directions
1. In a medium sauce pan, sweat the onions and garlic in olive oil.

2. Add the spinach and lemon juice into the pan until the spinach wilts. Stir and set aside to cool.

3. Dissolve flour in 8 ounces of milk and set aside.

4. Add the remaining 8 ounces of milk into a separate pan and let simmer.

5. Temper the milk in the pan with the flour mixture to a pliable consistency (make sure it's not too thick).

A good friend said that she couldn’t stop mourning the loss of her brother -- it's almost been a decade since he died! We had just had an amazing lunch and were happily slurping on milkshakes on a bench outside the restaurant so her statement caught me completely off guard, and without thinking, I blurted out, isn’t it wonderful that we have the ability to love someone so much that we can’t get over losing them? She looked surprised at my response and to be honest, I didn’t expect those words to come out either, but I thought it was a beautiful sentiment about such a tough part of loving and living our lives. The thought of loving someone so much, that you wholeheartedly miss them everyday of your life is the most powerful emotion that we can experience, and while it brings up longing and pain, it also reminds us how powerful Love really is! I recently took my kids to California Adventure and we haven’t been there in a long time so we really looked forward to going. What made the outing more special was that my grandmother, cousins and aunt, joined us for the first time ever! The outing took time to plan because our grandmother’s health has been fragile for about a year, so we wanted to make sure it was safe to take her. Nevertheless, she was determined and overly excited to make the outing and spend time with her daughter, grandchildren and great-grandchildren.

While my father was growing up, my grandmother worked all the time and never had money or time to take her children to theme parks or family outings. When my dad started his own family, he made sure we spent quality time together whenever possible and instilled those values on us. He made my grandmother very proud in the process because she wished to have had the opportunity to do the same with her children, and finds it to be a splendid virtue that many people tak…

1/2 cup chicken bouillon powder (weird I know, but it works)
1/2 cup Vietnamese chili sauce (Sriracha works too)
1/2 cup honey
1/2 cup cooking oil
1/2 cup pureed shallot (onion works fine too)
1/4 cup rice vinegar
20 kaffir lime leaves, finely chopped
24 whole jumbo chicken wings
1 cup cilantro leaves
1 cup roasted peanuts, chopped

Directions
Combine the bouillon, chili sauce, honey, oil, shallots, vinegar and lime leaves and whisk together to form a uniform paste. Reserve some paste for brushing, and place the rest in a resealable plastic bag. Toss the chicken wings in the paste in the bag and allow to marinate for 30 minutes to 1 hour.

This fruit snack is a good way to use leftover pulp from juicing that you would otherwise throw in the trash. Use it to your advantage and make sure you are getting enough fiber in your diet. Snack on these to satisfy cravings throughout the day, while getting the essential nutrients from whole fruits.

Ingredients
Leftover fruits/vegetables fiber pulp leftover from juicing (leftover from the morning smoothie).
2 cups old fashioned oats
1/2 cup chopped walnuts
1/2 cup honey
1/4 unsalted, unsweetened almond butter
1 tbsp flax seeds

1. Preheat oven to 350° F. Place leftover fruit/veggie pulp in a large bowl.
