Mexican Grilled Corn

Ingredients
4 ears corn
1/2 cup mayonnaise
1 1/2 cups sour cream
1/4 cup freshly chopped cilantro leaves
1 cup freshly grated Parmesan
1 lime, juiced
Red chili powder, to taste
2 limes cut into wedges, for garnish

Directions
Remove the husks of the corn but leave the core attached at the end so you have something to hold onto. Grill the corn on a hot grill or cast iron griddle pan until slightly charred. Turn it so it gets cooked evenly all over. Mix the mayonnaise, sour cream and cilantro together. Grate the Parmesan in another bowl. While the corn is still warm slather with mayonnaise mix. Squeeze lime juice over the corn and shower with Parmesan. Season with chili powder and serve with extra lime wedges.

Watermelon and Basil Margaritas

This cocktail is unlike the girly, slushy drinks you see in bars these days. It’s a grown-up version: not so sweet but really refreshing with herbal notes. Plus, each serving isn’t very strong, so you can enjoy a drink without feeling guilty. Makes 4 1/2 cups.

Ingredients
4 cups watermelon cubes
3 lime juices
1 lemon juice
1/2 cup orange liqueur (Triple Sec)
3/4 cup tequila
2 tbsp chopped basil leaves

Directions
Put all ingredients in a blender and process until very smooth. Pour over ice, garnish with some basil leaves and lime. Serve and enjoy!

Grilled Chicken Parmesan

Ingredients
1 10 -inch piece baguette
1 1/2 pounds tomatoes (about 5), quartered
Kosher salt
2 tablespoons extra-virgin olive oil
2 cloves garlic, thinly sliced
Pinch of red pepper flakes
4 6 -ounce skinless, boneless chicken breasts
1/2 teaspoon dried oregano
4 ounces part-skim mozzarella cheese, thinly sliced
3 tablespoons shredded parmesan cheese
1/4 cup chopped fresh basil


Directions
Cut off a 1 1/2-inch piece of the baguette and pulse in a food processor to make breadcrumbs. Add the tomatoes and 1/4 teaspoon salt and pulse until the tomatoes are finely chopped but not pureed. Heat 1 1/2 tablespoons olive oil in a medium skillet over medium heat; add the garlic and cook until just golden, about 1 minute. Add the red pepper flakes and tomato mixture and bring to a simmer; cook until the sauce thickens slightly, 8 to 10 minutes.

Ingredients
For the spice blend:
1/4 cup berbere spice mix or mild chile powder (such as ancho chile powder)
1/4 cup hot smoked paprika
2 tablespoons celery salt
2 tablespoons freshly ground white pepper
2 tablespoons ground cumin
1 1/2 teaspoons garlic powder
Kosher salt
For the chicken: Kosher salt4 skin-on, bone-in chicken thighs (about 1 1/2 pounds)
4 skin-on chicken drumsticks (about 1 pound)
1 quart buttermilk
3/4 cup coconut milk
6 cloves garlic (2 minced, 4 unpeeled)
Peanut or canola oil, for frying
2 to 3 sprigs rosemary
1 3/4 cups all-purpose flour
1/4 cup semolina flour
2 tablespoons cornstarch
1 tablespoon freshly ground white pepper

Unchartered Waters Are Scary...

There’s no doubt that we all survive the first day of school, every year! But this year was a bit tougher for me because my youngest-one started middle school. And a new school meant, getting through the anticipation of it being a scary day of unknowns for him. So the anxiety and sour stomachs came and went, for both us! On this first day, there were a few hiccups, like not finding a classroom, not being able to open his locker and panicking when he couldn’t find his friends at lunchtime. The mom of young kids in me broke into a sweat each time he would share any of his woes. And sadly, that mom needs to grow a little more now and be the mom of middle school kids, so that means to remind myself that my kids are older and have been alive long enough to deal with situations at school, without me crying inside or secretly falling apart when they happen.

Ingredients
4 tablespoons unsalted butter
2 cloves garlic, 1 minced or grated, 1 cut in half for rubbing bread, optional
Eight 1/3- to 1/2-inch-thick slices Pullman or white sandwich bread
8 slices emmentaler or Swiss cheese (about 4 ounces)
4 ounces thinly sliced leftover or deli ham
1/2 cup cornichons, sliced lengthwise

Directions
Melt the butter in a medium saucepan over medium-low heat and add the minced garlic. Cook to infuse the garlic flavor into the butter and until the butter turns brown, about 15 minutes. Remove from the heat and strain.

It’s almost been a year since I started working out, six days a week! When I started the workout routine I said to myself, I just need to get through these next six months. I needed six months because my 40th birthday was approaching and my daughter’s Bat Mitzvah was happening a few months after that. I didn’t think I was capable of keeping it going past those two events, I was happy with that. The two events came and went and I kept working out! I didn’t know where the inner-strength and commitment came from but I just kept going!

And this is where this quote came into mind; perhaps I am stronger than I think, both physically and mentally. This is when I understood the saying that you just have to put one foot in front of the other, and just keep going without analyzing or thinking about what’s next, and that’s exactly what I’ve learned to do. 2 pounds ground beef
1 teaspoon salt
1/2 teaspoon pepper
Cheese Options:
8 ounces blue cheese, cut into 1-inch cubes
8 ounces Pimiento Cheese Spread, recipe follows
8 ounces mozzarella, cut into 1-inch cubes
4 hamburger buns

Serving Options:Lettuce
Sliced tomatoes
Grilled sweet onions
Sliced pickles
Pimiento Cheese Spread:
Two 7-ounce jars canned, sliced pimientos, drained
Three 10-ounce bricks sharp Cheddar, finely grated
1 cup mayonnaise
White sandwich bread

DirectionsServing Options:
Mix the ground beef, salt and pepper in a large bowl and form the mixture into 8 equal-size balls. Press a cube of desired cheese into the center of each ball and cover completely with meat. This week was registration time at my kids’ school! Yes, it’s hard to believe that summer vacation is just about over! I volunteered at the PTA table to help with membership sign ups and direct-donation requests. As the parents walked up to our tent, before even registering their kids, they were flustered and overwhelmed. I didn’t feel that way just yet because I was caught up in my job, but as the first day of volunteering wrapped up, I got in my car and a wave of overwhelming feelings of little sadness and anxiety came right over me. What I thought was going to be a long vacation filled with lots of time to relax and enjoy with my kids, flashed right before my eyes, and I now find myself at the end of summer, getting ready to wrap it …
